This is a bastardized version for and if the Korean Kimbap (rice rolls in nori) and the Vietnamese Xoi Man (Sticky rice and Chinese sausages 'lap cheong') ever has a lovechild. It's about 4" in diameter and 8" in length. A monster.
Rolled sticky rice over the Chinese sausage, then nori, then thin sheet of chive omelette, then sticky rice again. Finally coating the whole thing with beaten egg mixture. Pan fried for about 5 minutes on each side to get it set.
Garnished with Thai sweet chili sauce, crispy fried baby shallots and minced spring onions.
